Santa Fe Enchilada Bake

So I will periodically pull recipes out of a magazine but it always takes a while to get around to making them. I decided to pull this one a couple weeks ago and decided that it was time to make it. It turned out pretty tasty so I decided to share the recipe with all of you. Enjoy!

What you need!
  • 1 lb boneless skinless chicken breasts, cut into bite-size pieces
  • 1 large onion chopped
  • 1 large green pepper chopped
  • 2 cups salsa
  • 10 oz frozen corn, thawed drained
  • 12 corn tortillas
  • 1 cup sour cream
  • 2 cups cheese grated
Make it!
  • Heat oven to 400 degrees.
  • Cook and stir chicken, onions, and peppers in large skillet sprayed with cooking spray on medium heat for 10 minutes or until chicken is cooked through. Stir in salsa and corn.
  • Arrange 6 tortillas on bottom of 13x9 inch baking dish, cover with layers of half each chicken mixture, sour cream and cheese. Repeat layers, cover with foil.
  • Bake 40 minutes or until heated through removing foil after 30 minutes. Let stand 5 minutes.

This looks yummy! I love the white chicken chili recipe you shared a while back. I am going to have to try this one soon.
