Spring is here

I love it, because the flowers in my garden are going crazy. It makes me so happy to have all the bright colors.

Crock Pot White Chicken Chili

So I love any recipe that can be cooked in a crock pot because it's super easy. I tried this one on Sunday and it was great, so I figured I would pass it on.

Ingredients
  • 1 1/4 lbs boneless skinless chicken
  • 2 cans great northern beans or navy beans
  • 1 can hominy or white corn
  • 1 envelope taco seasoning
  • 1 can of chopped green chilies
  • 1 can condensed cream of chicken soup
  • 1 can chicken broth
  • 1/2 cup sour cream
  • monterey jack cheese
Directions
  • Place chicken in a crock pot.
  • Top with beans and corn.
  • In a medium bowl, combine taco seasoning, chilies, condensed soup, and chicken broth. Pour over top of ingredients in the crock pot.
  • Cook for 6 to 8 hours on low.
  • Before serving, stir gently to break up chicken, then stir in the sour cream.
  • Serve topped with jack cheese and chips.
It was really tasty, so if you are looking for something new to try I would recommend it.

One by One

First of all I need to say that I LOVE the temple. There is such a peace that comes when I am there. The temple has been closed for the past two weeks, so when I was able to go yesterday I really enjoyed just being there. There is a painting that I always look at as I leave the temple. It's one of Christ teaching and blessing the children on the American continent during his visit here. (I couldn't find the painting that was in the temple, but I also love the one above.) I think I love the painting so much, because it reminds me of one of my favorite parts of the Book of Mormon. It's 3 Nephi 17:11-12, 21-24. It's were Christ commands that the children be brought to him. He takes the children and blesses them one by one. That phrase one by one really stood out to me yesterday when I was reading there and in 3 Nephi 11:13-17 where Christ commands all the people to come forth and touch the nail prints in his hands and feet. I think that both of these passages help remind me that both my Savior Jesus Christ and my Heavenly Father know who I am and want to have that one on one relationship with me. That as an individual I am important, that includes my thoughts, prayers, hopes, dreams and fears. It's important for me to remember that as I draw myself closer to my Heavenly Father and Savior Jesus Christ, that it's me that's important to them. That they know me. I can't wait for the day when I, like those in the Book of Mormon, will be able to stand before Christ and see the nail prints in his hand. Until then I will continue to work on building a relationship one on one with my Savior Jesus Christ and my Heavenly Father.

Volleyball Tournament

So this last weekend I was involved in a amateur volleyball tournament. It was through the Arizona Water for People Association. It's a non-profit organization that helps developed locally sustainable drinking water. My company was sponsoring a team and they needed some girls to play, so I agreed and convinced Heather and Michelle to join me. It ended up being really fun. We played 5 games. The first to set our place in the tournament. We won our first game, lost the second, won the third one and lost the fourth game. We played pretty well together, but communication is key... I guess that's the case in most sports. Overall it was great fun and I'm glad we were able to play.

I go through phases of having lists of books to read and not wanting to read anything. Right now I have tons of books on my lists.

I'm also trying to finish Gun's, Germs & Steel -Jared Diamond

I'll just have to see how long it takes me to actually finish all of the those books without adding more to my list.

Easter

This has to be one of my favorite thoughts about Easter. It's a day that brings hope for the future.

I was especially excited this Easter Sunday that I also had the opportunity to listen to the words of latter-day prophets and apostles. There words were words of hope and peace to my heart. The simple testimonies of the apostles about my Lord and Savior Jesus Christ touched my heart. I'm so thankful for their words and how much they strengthen my testimony and understanding of the gospel. So this past weekend I was so thankful for the opportunity to not only hear the words of prophets and apostles but also contimplate the greatest gift I was given... that being the atonement, death and resurrection of my Savior Jesus Christ.

Memories

So I don't know what made me think about it this week, but for some reason I was remembering back to when I was a kid. One of our favorite pass times was to play this quality game... I remember spending hours trying to beat the different levels. So when I went about this week trying to see what I could find on it I was kind of happy to see that you could download free demo versions of the game. I haven't actually tried to download them yet, but I figured it might be fun to play the games again and bring back those old memories. I don't know if I would be any good anymore, but maybe I'll let you know if I try.
